Banana Cake

A quick and easy egg free banana cake to make that can be made vegan and gluten free with a few substitutions

We were a family of banana lovers and would always buy a big bunch of them. If they weren't eaten for breakfast with porridge, then they would be served with ice cream for dessert. However there were times when there were just too many bananas left in the house. Being the baker in the family, it was my task to create new recipes and concoct something that would both use them up and was palatable. My banana cake recipe can easily be made vegan by substituting the Greek yoghurt with a non dairy yoghurt.

Recipe for Banana Cake

Ingredients

  • 110 g Greek Yoghurt

  • 1/2 tsp Baking Soda

  • 2 Overripe Bananas

  • 33 g Sugar

  • 100 g Liquid molasses (gur)

  • 75 g Oil (olive/sunflower)

  • 1 tsp Vanilla Essence/Extract

  • 180 g Flour

  • 1 1/2 tsp cinnamon powder

  • 1/4 tsp clove powder

  • 1/4 tsp Salt

Method

1) In a bowl, add the baking soda to the yoghurt, whisking to incorporate and then set aside

2) In a separate bowl sieve the flour, salt and spices

3) Preheat oven to 180C/350F

4) Mash the bananas in another bowl until they are lump free. Small lumps are ok.

5) Add the sugar, oil and vanilla essence/extract to the bananas and mix well.

6) Add in the yoghurt mixture and whisk to combine

7) Carefully fold in the flour mixture with liquid ingredients ensuring that you don't over mix

8) Place in oven for 25-30 minutes and test that a skewer remains clean when inserted in the cake

9) Allow to cool before serving
